Ingredients

  • 4 egg yolks
  • 1 cup (240 ml) sugar
  • 2 1/2 cups (600 ml) whole milk
  • 1/2 cup (120 ml) cream
  • 1 Tbsp (15 ml) instant espresso mix
  • 1 tsp (5 ml) water

Directions

  1. Whisk eggs and sugar until thick and pale yellow.
  2. Heat milk and cream in a pan over medium-low heat, stirring constantly to prevent sticking, until foamy, about 10 minutes.
  3. Remove from heat. Cool for 10 minutes.
  4. Whisk eggs into milk mixture, cooking over low heat until mixture thickens.
  5. Mix instant espresso with water to create a paste. Add to mixture.
  6. Keep stirring over low heat until mixture thickens (do not boil).
  7. Cool, then refrigerate overnight.
  8. Pour into ice cream maker, and freeze according to instructions.
