Cotechino Sausage
A New Year’s specialty dish from Modena, cotechino is a traditional pork sausage that is typically served with cannelloni beans or lentils and mashed potatoes. This legacy dish honors every part of the animal, with no parts wasted. For example, frugal farmers with large families to feed will incorporate pig skin to bulk up the content.

Ingredients
- 6 cloves garlic, chopped
- 1 cup (100 g) Parmesan cheese, grated
- 1 Tbsp (15 ml) nutmeg
- 1 Tbsp (15 ml) clove
- 1 Tbsp (15 ml) cinnamon
- 4 Tbsp (60 ml) salt
- 1 Tbsp (15 ml) cayenne pepper
- 1 lb (453 g) ground pork
- Beef bungs (natural casing for sausage)
- 1 gallon (4 L) cold water
Directions
- Mix garlic, cheese, nutmeg, clove, cinnamon, salt, and pepper.
- Add pork and skin, combining well.
- Stuff into natural casings (bungs) and tie off ends.
- Place sausages in cold water.
- Bring to a boil and simmer for 3 hours.
