Ingredients

  • 6 cloves garlic, chopped
  • 1 cup (100 g) Parmesan cheese, grated
  • 1 Tbsp (15 ml) nutmeg
  • 1 Tbsp (15 ml) clove
  • 1 Tbsp (15 ml) cinnamon
  • 4 Tbsp (60 ml) salt
  • 1 Tbsp (15 ml) cayenne pepper
  • 1 lb (453 g) ground pork
½ lb (226 g) ground pork skin (cleaned of hair and bristle)
  • Beef bungs (natural casing for sausage)
  • 1 gallon (4 l) cold water

Directions

  1. Mix garlic, cheese, nutmeg, clove, cinnamon, salt, and pepper.
  2. Add pork and skin, combining well.
  3. Stuff into natural casings (bungs) and tie off ends.
  4. Place sausages in cold water.
  5. Bring to a boil and simmer for 3 hours.
