Cotechino Sausage
A New Year’s specialty dish from Modena, cotechino is a fresh sausage that is typically served with cannelloni beans or lentils and mashed potatoes. This legacy dish honors every part of the animal with no parts wasted. For example, frugal farmers with large families to feed will incorporate pig skin to bulk up the content. Ingredients
- 1 lb (453 g) ground pork
- 1/2 lb (226 g) ground pork skin (cleaned of hair and bristle)
- 6 cloves garlic, chopped
- 1 cup (100 g) Parmesan cheese, grated
- 1 Tbsp (15 ml) nutmeg
- 1 Tbsp (15 ml) clove
- 1 Tbsp (15 ml) cinnamon
- 4 Tbsp (60 ml) salt
- 1 Tbsp (15 ml) cayenne pepper

- 1 gallon (4 l) cold water
Directions
- Mix garlic, cheese, nutmeg, clove, cinnamon, salt, and pepper.
- Add pork and skin. Combine well.
- Stuff into bungs. Tie off ends.
- Place sausages in cold water.
- Bring to a boil and simmer for 3 hours.
