Fiori di Zucca (Fried Zucchini Blossoms)
Fiori di zucca (fried zucchini blossoms) are amazing finger foods. They are light but decadent, delicate but substantial. The key aspect to this dish is plucking the blossoms immediately before cooking them, since they wilt quickly. Recipe Servings: Serves 6

Ingredients
- 1 cup (120 g) flour
- 1 tsp (5 ml) salt
- 2 eggs
- 1/2 cup (120 ml) water
- 1 Tbsp (15 ml) vegetable oil, plus oil for frying
- 2 oz (56 g) mozzarella cheese
- 10 anchovy fillets, halved lengthwise and patted dry
- 20 squash blossoms
Directions
- Stir flour and salt together in a bowl. Add eggs, water, and vegetable oil. Whisk together until blended.
- Pour frying oil 1 inch deep into a pan. Heat to 375°F (190°C).
- As oil heats, stuff each blossom with cheese and a piece of anchovy. Press petals of each blossom closed.
- Dip the blossoms into batter. Carefully drop into oil. Fry, turning after about 3 minutes, until blossoms are golden brown on all sides.
- Sprinkle with salt and serve.
