Fiori di zucca fritti (fried zucchini flowers) are amazing finger foods. They are light but decadent, delicate but substantial. The key aspect to this dish is plucking the blossoms immediately before cooking them, since they wilt quickly.

Ingredients
- 1 cup (120 g) flour
- 1 tsp (5 ml) salt
- 2 eggs
- 1 Tbsp (15 ml) vegetable oil, plus oil for frying
- 2 oz (56 g) mozzarella cheese
- 10 anchovy fillets, halved lengthwise and patted dry
- 20 zucchini blossoms
Directions
- Stir flour and salt together in a bowl.
- Add eggs, water, and vegetable oil, whisking together until blended.
- Pour frying oil one inch deep into a pan and heat to 375°F (190°C).
- As oil heats, stuff each blossom with cheese and a piece of anchovy.
- Press petals of each blossom closed.
- Dip the blossoms into batter.
- Carefully drop into oil.
- Fry, turning after about three minutes, until blossoms are golden brown on all sides.
- Sprinkle with salt and serve.
