Ingredients

  • 1 cup (120 g) flour
  • 1 tsp (5 ml) salt
  • 2 eggs
  • 1/2 cup (120 ml) water
  • 1 Tbsp (15 ml) vegetable oil, plus oil for frying
  • 2 oz (56 g) mozzarella cheese
  • 10 anchovy fillets, halved lengthwise and patted dry
  • 20 squash blossoms

Directions

  1. Stir flour and salt together in a bowl. Add eggs, water, and vegetable oil. Whisk together until blended.
  2. Pour frying oil 1 inch deep into a pan. Heat to 375°F (190°C).
  3. As oil heats, stuff each blossom with cheese and a piece of anchovy. Press petals of each blossom closed.
  4. Dip the blossoms into batter. Carefully drop into oil. Fry, turning after about 3 minutes, until blossoms are golden brown on all sides.
  5. Sprinkle with salt and serve.
