Grissini (Breadsticks)

Grissini are thin, crunchy breadsticks from the Piedmont region of Italy. They are thought to have been created in the 17th century to aid in digestion for a young duke. Over time, they became a staple of Italian cuisine, often served alongside soups, salads, or as part of an antipasto platter. Their crisp texture and versatility make them a popular accompaniment to meals or a delightful standalone snack. Naturally vegetarian and dairy-free, grissini can be customized with a variety of flavors, such as herbs, seeds, or cheese.

Ingredients

  • ¾ cup (180 ml) warm water (about 110°F / 45°C)
  • 1 tsp (5 ml) sugar
  • 1 2¼-tsp (11 ml) packet active dry yeast
  • 2¼ cups (280 g) all-purpose flour
  • 1 tsp (5 ml) salt
  • 2 Tbsp (30 ml) olive oil, plus extra for brushing
Optional toppings: sesame seeds, poppy seeds, dried rosemary, or grated Parmesan cheese

    Directions

    1. In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the top, stir gently, and let it sit for 5–10 minutes until frothy.
    2. In a large bowl, combine the flour and salt. Add the activated yeast mixture and olive oil. Mix until a rough dough forms.
    3. Transfer the dough to a floured surface and knead for about 8–10 minutes, or until smooth and elastic. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
    4. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper. Divide the dough into 24 equal pieces. Roll each piece into a thin rope, about 12 inches (30 cm) long. Arrange the ropes on the baking sheets, spacing them slightly apart.
    5. Lightly brush the breadsticks with olive oil. Sprinkle with your choice of toppings, such as sesame seeds, poppy seeds, dried rosemary, or grated Parmesan cheese.
    6. Bake in the preheated oven for 20–25 minutes, or until golden and crisp. Rotate the baking sheets halfway through for even baking.
    7. Let the grissini cool completely on a wire rack. Serve as a snack, appetizer, or accompaniment to soups and salads.

    Notes

    • For extra crunch, let the breadsticks bake for an additional 2–3 minutes.
    • Store in an airtight container at room temperature for up to 1 week.
