Insalata Caprese (Salad from Capri)
Insalata Caprese (salad from Capri) is possibly Italy’s most widely known salad. It is usually made with fresh mozzarella, fresh tomatoes, and fresh basil seasoned with salt, black pepper, and olive oil. Arugula and oregano are sometimes added. Because this salad is so simple, it is necessary to use high-quality ingredients. Recipe Servings: Serves 6–8

Ingredients
- 2 lb (907 g) tomatoes, sliced, seeded,and drained
- 1 lb (453 g) mozzarella, sliced
- 10 leaves basil, shredded
- 1/4 cup (60 ml) olive oil
- salt to taste
- Pepper to taste
Directions
- Arrange tomatoes on a serving plate.
- Arrange cheese over tomatoes.
- Sprinkle with salt, pepper, and basil.
- Drizzle olive oil over all.
- Serve at room temperature.
