Insalata Caprese (Caprese Salad)
Insalata Caprese (Caprese salad) is possibly Italy’s most widely known salad, named after the island of Capri where it is believed to have originated. There are multiple stories about its origin, including that it was created to honor the Italian flag or to appeal to vacationing royalty. Caprese salad is usually made with fresh mozzarella, fresh tomatoes, and fresh basil seasoned with salt, black pepper, and olive oil. Arugula and oregano are sometimes added. Because this salad is so simple, it is necessary to use high-quality ingredients.

Ingredients
- 2 lb (907 g) tomatoes, sliced, seeded, and drained
- 1 lb (453 g) mozzarella, sliced
- 10 leaves basil, shredded
- Salt, to taste
- Pepper, to taste
Directions
- Arrange tomatoes on a serving plate.
- Arrange cheese over tomatoes.
- Sprinkle with salt, pepper, and basil.
- Drizzle olive oil over all.
- Serve at room temperature.
