Insalata di arance is an orange salad that has many iterations in Italian cuisine. In most recipes, the sweet tartness of the fresh fruit is balanced with the sharp bite of fennel or red onion. Other styles of this salad call for salty anchovies, oily walnuts or pine nuts, or the tang of vinegar. Ingredients

  • 4 oranges
  • 1 bulb fennel
  • 1 cup (135 g) black olives, pitted
  • 1/2 cup (60 g) walnuts
  • olive oil
  • salt
  • Pepper

Directions

  1. Peel oranges and slice into thick rounds. Thinly slice fennel bulb, using a mandolin if desired.
  2. Add ingredients to a bowl, along with walnuts and black olives.
  3. Drizzle olive oil over salad and season to taste with salt and pepper.
  4. Toss ingredients and serve immediately.
