Lasagne

Lasagne is one of Italy’s signature dishes, traditionally served for special occasions and family gatherings. From the simplest to the most elaborate preparations, lasagne never fails to please. No-boil noodles have made preparation much faster, and endless possibilities for fillings make it a highly versatile dish.

Ingredients

  • 1 lb (453 g) lasagna noodles
  • 2 cups (480 ml) tomato sauce
  • 1 cup (113 g) grated mozzarella cheese
  • 1 cup (225 g) cottage cheese or 1 cup (248 g) ricotta
  • 1 cup (156 g) chopped spinach
  • 1 cup (240 ml) boiling water
½ cup (50 g) grated Parmesan cheese
  • 1 cup (225 g) chopped pancetta (Italian unsmoked, cured pork belly) (optional)

Directions

  1. Preheat oven to 375°F (190°C).
  2. Grease an oblong 13 X 9-inch (32 X 22-cm) glass baking dish.
  3. Cover bottom with a thin layer of sauce.
  4. Make 2 layers of noodles topped with cheeses and spinach (plus pancetta if using).
  5. Carefully pour in hot boiling water all over dish.
  6. Sprinkle top with Parmesan.
  7. Seal tightly with foil.
  8. Bake for 60 minutes.
  9. Remove from oven and let rest for 15 minutes before cutting.
