Panino (Small Bread Roll)

The panino ("small bread roll") needs little introduction, other than the fact that most Americans do not realize that ordering a "panini" is technically incorrect. Panino is the singular form and does not refer to a pressed and grilled sandwich. This homemade panino, however, is the perfect vehicle for any type of sandwich. Just make sure to grill the sandwich in order to get the best flavor.

Ingredients

  • 3 cups (360 g) flour
  • 2 tsp (10 ml) salt
  • 1 tsp (5 ml) instant yeast
1¼cups (300 ml) water ¼ cup (60 ml) olive oil

Directions

  1. On a flat surface, mix together flour and salt.
  2. Once combined, make a well in the middle.
  3. Add yeast to water and let it sit for 2 or 3 minutes.
  4. Pour water and oil into the well in the flour and knead until a dough is formed.
  5. Place dough in a greased bowl and cover.
  6. Let it sit for about 2 hours.
  7. Flour a work space and divide dough into 12 equal pieces.
  8. Knead each piece separately (do not overwork dough) and allow to sit for about an hour.
  9. Preheat oven to 450°F (232°C).
  10. Place dough pieces on baking sheet and make a shallow slash in the top of each. 
  11. Bake for 20–25 minutes.
  12. Enjoy fresh, perhaps with melted butter, or serve stuffed with desired sandwich fillings.
