Panna Cotta (Cooked Cream)

Panna cotta is a chilled cream dessert thickened with gelatin. It is sweet and airy and can be topped with a variety of fruits or liqueurs, chocolate or caramel sauces, or just enjoyed on its own. Panna cotta comes from the Piedmont region. This recipe uses ramekins so the panna cotta can stand on its own; it can also be served in small glasses with spoons.

Ingredients

  • 1 Tbsp (15 ml) unflavored gelatin
  • 2 Tbsp (30 ml) cold water
  • 2 cups (480 ml) heavy cream
  • 1 cup (240 ml) half and half
  • ⅓ cup (65 g) sugar
  • 1½ tsp (7.5 ml) vanilla extract

Directions

  1. In a small saucepan, sprinkle gelatin over water and let stand for about 1 minute.
  2. Heat mixture over low heat until gelatin dissolves. Remove pan from heat.
  3. In a large saucepan over medium-high heat, heat cream, half and half, and sugar to a boil, stirring constantly.
  4. Remove pan from heat and stir in gelatin mixture and vanilla extract.
  5. Divide mixture evenly into 8 ramekins and allow to cool to room temperature.
  6. Cover and chill ramekins for at least 4 hours.
  7. To serve, dip ramekins in warm water for a few seconds.
  8. Using a thin knife, run it along the inside edge of ramekins to dislodge panna cotta.
  9. Serve on individual plates with desired toppings.
