Spinaci alla Romana (Roman-Style Spinach)

Spinach is, unfortunately, one of those vegetables that tends to get demonized or overlooked. Boiled beyond recognition, with no enjoyable flavor...it doesn't have to be so. Spinaci alla Romana adds the crunch of pine nuts and the sweetness of raisins for a lovely balance of flavors and textures.

Ingredients

  • 2 lbs (907 g) fresh spinach
  • 1 Tbsp (15 ml) olive oil
  • 2 Tbsp (15 ml) pine nuts
  • 1 clove garlic, minced
  • 3 Tbsp (45 ml) raisins
¼ tsp (1.25 g) salt
  • Pinch freshly ground black pepper

Directions

  1. Boil spinach in water for about 3 minutes.
  2. Drain, squeeze dry, and set aside.
  3. In a skillet over medium heat, heat oil.
  4. Stir in pine nuts and garlic and cook for about 30 seconds.
  5. Add spinach and raisins to oil.
  6. Stir and cook for about 3 minutes.
  7. Season spinach with salt and pepper.
  8. Serve warm.
