Spinaci alla Romana (Spinach with Raisins)

Spinach is, unfortunately, one of those vegetables that tends to get demonized. Boiled beyond recognition, with no enjoyable flavor...it doesn't have to be so. Spinaci alla Romani adds the crunch of pine nuts and the sweetness of raisins for a lovely balance of flavors and textures. Recipe Servings: Serves 4
